My Go-To Dressing Recipe // Vegan, Gluten-Free
I’ve been obsessed with this dressing recipe the past few months! It’s light and healthy but has a little more pizazz than just oil and vinegar. I have a hard time finding dressings that I love and that are vegan, gluten-free and soy free, so I just make my own. I’m sharing the recipe below along with my go-to salad base that’s the perfect bed for any protein and/or fats you want to add!
Lemon-Mustard Dressing
Ingredients:
1C extra virgin olive oil
1/2C spicy brown mustard (I used Primal Kitchen)
1/4C juice of lemon
1/4C apple cider vinegar
1/4 tsp turmeric powder
1/2 tsp cracked black pepper
1/2 tsp seaweed salt
1/2 tsp garlic powder
Add all ingredients into a medium size bowl. Mix well with whisk. Poor into dressing jar. I like this one because it has a whisk ball inside so I can shake it well before each use.
Play with ratio of ingredients depending on your taste. If you like a super creamy dressing, add more mustard, or less for a thinner dressing.
Salad Base
arugala
sliced onions
shredding carrots
mustard-lemon dressing (above)
extra cracked black pepper (optional)
Mix all together with dressing. Add your fat and/or protein of choice and enjoy!
